Date cake

Ingredients

  • 1 cup dried dates, roughly chopped
  • 1 cup water
  • 125g polyunsaturated margarine
  • ¾ cup brown sugar
  • 1½ teaspoons mixed spice
  • 1 medium egg, lightly beaten
  • 1½ cups self raising flour, sifted
  • 1 teaspoon bicarb soda
  • Icing sugar (optional)

Method

  1. Preheat oven to 180°C. Line a 19.5cm x 28.5cm slice tray with grease proof paper
  2. Place dates and water in a medium size saucepan and bring to the boil
  3. Remove from heat, add margarine, sugar and mixed spice. Stir until combined
  4. Allow to cool, add egg, flour and bicarb soda, stir to combine
  5. Spread mixture into prepared tin, bake for 25 – 30 minutes
  6. When cool, slice can be lightly dusted with icing sugar if desired.
