Chicken and cranberry sausage rolls

Ingredients

  • 3 slices multigrain or wholemeal bread, crusts removed, roughly chopped
  • 1kg lean chicken or turkey mince
  • 3 spring onions, finely sliced
  • ¾ cup cranberry sauce
  • 1 cup reduced fat cheddar cheese, grated
  • 4 sheets reduced fat frozen ready rolled puff pastry, thawed
  • 1 egg, lightly beaten

Method

  1. Preheat oven to 180°C, line two baking trays with baking paper
  2. Place bread into a bowl, drizzle with ¼ cup water. Stand for three minutes, drain and squeeze excess water from bread
  3. Combine bread, mince, spring onions, cranberry sauce and cheese in a large bowl. Mix well to combine
  4. Cut a sheet of pastry in half. Spoon about ½ a cup of mince mixture along the long edge of the pastry. Brush opposite side with water and roll up, pressing to seal
  5. Place on prepared tray and repeat with remaining pastry
  6. Brush rolls with beaten egg. Bake for 30 to 35 minutes or until brown and cooked through
