Christmas crackle cookies

Ingredients

  • 1 cup plain flour, sifted
  • 1½ cups wholemeal plain flour, sifted
  • 2 teaspoons baking powder
  • ½ cup polyunsaturated margarine
  • 1 cup caster sugar
  • 2 medium eggs
  • 1 teaspoon vanilla essence
  • ½ cup icing sugar

Method

  1. Preheat oven to 180°C, line two baking trays with baking paper
  2. In a medium bowl add flours and baking powder
  3. In a large bowl of electric mixer add margarine and sugar, mix until creamy then add eggs, vanilla extract, food colouring or flavour plus juice and zest of choice (see ‘flavours and colours’ below)
  4. Slowly add dry ingredients to wet ingredients and mix until well combined
  5. Place icing sugar into a small bowl
  6. Roll 1 tablespoon of mixture into balls then roll in icing sugar to coat well. Place balls onto baking sheet, leaving room for spreading
  7. Bake for 10 minutes, allow to cool on the tray slightly before transferring to a cooling rack.

Flavours and colours

  • Red: red food colouring, cookies and cream essence (available from the supermarket)
  • Green: green food colouring, 2 tablespoons lime zest, 2 tablespoons lime juice
  • Yellow/gold: yellow food colouring, 2 tablespoons lemon zest, 2 tablespoons lemon juice.
